Yum! This is a real winner in our household, had to share with all our Mom’s.
You can also replace the Haloumi with Feta cheese.
4 medium zucchini – grated
200g haloumi – grated
4 spring onions – chopped
1/2 cup mint leaves – roughly chopped
1 cup plain flour
1 1/2 tsp baking powder
2 eggs
1 lemon – finely grated rind, plus juice
1/4 cup olive oil
Combine zucchini, haloumi, onions and mint in a large bowl. Combine flour and baking powder in a bowl and add to the vegetable mixture. Whisk eggs, 1/2 the lemon rind and 1 tbs of the lemon juice in a jug. Add to the vegetable mixture with salt and pepper. Stir until combined. Heat the oil, and add 1/4 cups of the mixture to the pan, forming round fritters. Cook for 3 minutes on each side, or until golden and cooked through. Combine the left over lemon rind, juice and aioli in a bowl and serve with the fritters and a salad of your choice.
